High Protein Peanut Butter Cookies

Cream 1/2 cup coconut oil and 1/2 cup softened butter
Add 1/2 cup white sugar, 1/2 cup brown sugar, 1/2 cup coconut sugar
After creaming together, add 1/2 cup natural peanut butter
Beat in 2 eggs
In a medium bowl mix 1 cup high protein defatted peanut butter flour, 1 cup whole wheat flour, 1 cup white flour with 2 teas. baking soda and 1 teas. salt
Add dry ingredients to wet ingredients.
Blend well but not for too long and then add 2 cups dark chocolate chips.
Bake at 350 F for 8-10 minutes

Low Carb Super Green Smoothie


1 cup ice cubes
2 cups frozen strawberries or raspberries
2 cups fresh, preferably organic, kale
2 cups green tea sweetened to taste with stevia (if the tea is still warm, that is fine, just add a bit more ice)
I sliced, cored green apple 

Blend in Vitamix or other high quaility blender and enjoy! This makes a large batch to share.  And don't worry if you don't have kale, really any healthy greens will do. 










Shrimp and Okra Gumbo

Saute 3Tb butter with 3Tb flour until a very dark brown roux.
Immediately add 2 cups water. 
Then add:
1 bunch chopped green onions
1 chopped bell pepper (red or green)
1 pd. chopped fresh okra or 1 can okra
1 large can stewed tomatoes
1 teas. garlic powder
1 teas. cumin
1Tb salt
1Tb Tony's (Cajun seasoning)
1Tb chili powder
1Tb sugar
1Tb Worcestershire sauce
Cook on a low simmer for at least 1 hour.
Then add 2 more cups of water along with
1 pd. of raw, peeled shrimp
1 pd. of chopped sausage
1 teas. crab/shrimp boil 
Serve over cooked rice



Louisiana Granola

4 cups old-fashioned oats
1/2 cup sunflower seeds
1/2 cup walnuts or pecans
1/2 cup shredded coconut
1/4 flax seeds
1/2 cup brown sugar
1 teas. salt
mix above together then add.......
1/2 cup canola or  3/4 cup coconut oil
1/2 cup honey
1 teas. vanilla

spread onto cookie sheet sprayed heavily with oil or use parchment paper.
bake at 350 degrees for 30 min.

I've been making this granola for 12 years now and it is absolutely the best!  I get tons of compliments on it.  You can always leave the coconut out and add more nuts of choice if you want.......enjoy!





Having a Bad Day Pie
1 large dark chocolate bar.....melted in microwave
1/2 cup peanut butter......mix with above chocolate
add to 1 large tub cool whip
pour into large graham cracker crust
garnish with chocolate chips
chill or just eat right away......it's a sure pick-me-up :o)



Chili is an awesome cold weather, large family meal......I'm not sure what could beat it when the temp. is below 20 degrees.......this is an simple recipe that you can whip up quick and it just needs to simmer an hour.

Best/Easiest Chili

Brown 1-2 pounds ground meat (whatever amount you have)
Add 1 chopped onion and one chopped bell pepper to meat while it's browning
After meat is cook and chopped up some with fork add........
3 Tbsp. chili powder
2 Teas. garlic powder
3 Teas. salt
1 small can tomato paste
1 can Rotels
1 jar Ragu or whatever spaghetti sauce you have on hand
2 cans kidney beans
2 cans pinto beans
4 cups water

Simmer for at least an hour or more if you have time. Serve with grated cheese on top and some crusty bread.



Hello Dollies


Melt 1/2 stick of butter in the oven on 350 in a 9x12 pan.
Crush 1 package (not box :o) of graham crackers.
When butter is melted, pour graham crackers over butter, then layer the following:
1/2 cup coconut
1/2 cup pecans or walnuts
1 cup chocolate chips
1 can sweetened condensed milk
Bake at 350 for 25-30 min.
Cool in pan 10 min. and enjoy!

Piggly Wiggly Black Bean Soup

1 bag of dried black beans (preferablly from Piggly Wiggly, but doesn't have to be :o)
After rinsing the above beans
Cook in a slow cooker, aka crock pot, on low for 10 hours or high for 5 hours.
Then take a jar of your favorite salsa and saute it in a tbls. of olive oil for a bit then add to beans.
Also add 1 can of corn and salt and pepper to taste.
Top with sour cream and/or cheddar cheese


High Protein Smoothie


1 block of Tofu
1 1/2 cups of frozen berries
1 frozen banana
1/2 cup kefir or yogurt
3 Tbls. frozen OJ concentrate and 2 cups water, or just 2 cups OJ
2 Tbls. ground flax seed

Blend till smooth in blender.
This makes enough for about 6 kids.
You really can't taste the Tofu and it's much better for you than protein powder. Most of my kids really like it!


Ham and Veggie Quiche


1 unbaked pie crust- prick with fork and bake at 425 for 10 min.
Layer about 5 slices of swiss cheese on bottom of crust
Beat together 4 eggs and 1/2 cup cream or half and half
Add salt and pepper to the egg mixture to taste
Layer about 1/2 cup ham and whatever veggies you have over the cheese (I think brocolli, spinach, onion and bell pepper are the best but you can add whatever, just don't overfill)
Pour egg mixture in crust over cheese, ham and veggies
Top with grated cheddar cheese
Bake at 425 for 30 min. with a pan underneath
Enjoy!


Sauteed Squash
4-5 squash (you can do half zucchini if you want)
1 large yellow or vidalia onion
1/2 stick butter
put the butter in a large skillet and melt
chop up squash length wise (so it's in circles)
chop up onion pretty small, but not minced
add to butter and saute over med heat stirring occasionally for 30 min. or so
after it's pretty mushy add 1 teas. salt and some Cajun seasoning if you want
Enjoy! (you can always cook it longer on low)

Fast Collards
1-2 bunches collard greens 
wash greens good and cut off from their middle spine.  Then shred or cut them with kitchen scissors.
heat 1-2 Tbs. olive oil in a large pot
when hot, add collards (they will fill pot but will shrink up a lot)
cover with a lid and cook on med./low for 10 min. (stir occasionally)
stir good and add 1-2 teas. salt and a splash of apple cider vinegar.
You're good to go!

Sweet Cream Biscuits

2 cups self-rising flour
1 cup heavy cream (plus a little more if that doesn't stick together in a ball good)

That's all the ingredients!  Mix together. flour a service and cut into biscuit shape.
Bake at 425 for 10 min.  
I promise thes are so good and so easy.

To make scones......add 1/2 cup sugar to the above and any dried fruit you want and bake like above.






Stewed Apples




core and slice 10-12 apples (you don't need to peel and use can use all your ugly ones up.  they can also be any type and you can mix up the types)

place in large stew pot
sprinkle 1/2 cup sugar over apples
add 2 teaspoons of cinnamon
add juice of 1 lemon

bring to simmer over med. then turn down to low and simmer for about an hour
right before serving at 2 tbls. butter

                                       Becca's Oatmeal Cookies
1/2 cup softened butter
1/2 cup coconut oil
3/4 cup brown sugar
1/2 cup white sugar
Cream above together
Add 2 eggs and 2 teas. vanilla
Mix together and then add 3 cups old-fashion oats
Add 1 1/2 cups whole wheat pastry flour mixed with 1 teas. baking soda and 1 teas. salt
Blend until mixed and then add 2 cups chocolate chips.
Add 1 cups chopped nuts if desired
Bake at 375 for 10 minutes




Homemade Vegetable Beef Soup

I pd. ground beef, browned in large pot or dutch oven, with one onion, one bell pepper, a few cloves garlic
cook this until onion is pretty clear and beef pretty brown
then add 1 can tomato paste, stir real good
then add 1 jar spaghetti sauce (what ever kind you have on hand)
then add 8 cups water
Let that simmer for about a half hour
then add one can cream corn, one can stewed tomatoes, one can kidney beans
then add one bag of mixed frozen veggies (regular size, not large)
bring this to boil
while it's heating up add 1 teas. italian seasoning, 1 teas. cajun seasoning, 1 Tbls. salt
then when it's boiling, add about a half a box of dry small pasta, could be macaroni, bowties, whatever
turn heat down to medium and cook about another half hour.

Stuffed Bell Peppers
5-7 bell peppers with tops off and insides cleaned out.
Brown 1 pound lean ground meat
When browned, add 1 medium jar of salsa or picante sauce.
Then add 1 teas. salt and a small can of stewed tomatoes.
Add 2 cups cooked rice.
Stuff bell peppers with the above mixture.
Top with grated cheddar cheese.
Bake in 350 oven for 25-30 minutes.
Enjoy


Grandmother's Famous Cranberry Bread
2 cups all-purpose flour
1 cup white sugar
1 1/2 teas. baking powder
1 teas. salt
1/2 teas. baking soda
1/4 cup butter
1 egg beaten
3/4 cup orange juice
1 1/2 cup golden raisins (or you can use brown or currants or a combination, whatever you have on hand)
1 1/2 cup fresh cranberries

Preheat oven to 350F
Whisk together dry ingredients
Next, cut in butter and mix until crumbly
Add egg and OJ
Fold in raisins and cranberries.

Pour into buttered loaf pan (I doubled the recipe to make the large one pictured above).
Bake for 60-70 min, until toothpick inserted comes out clean.
Cool in pan slightly and then pop out onto wire rack.
Enjoy!

Cracker Toffee
Preheat oven to 425 degrees
2 1/2 sleeves saltine crackers placed on 2 cookies sheets
Bring to boil over medium heat 1 cup white sugar, 1/2 cup brown sugar and 4 sticks butter.  Boil for 3 minutes.
Pour over crackers and bake in preheated oven for 5 minutes.
Remove from oven and top with 3 cups chocolate chips.
Cover pans with other cookie sheets so chocolate melts for a few minutes.
Spread chocolate over top and put in freezer (or outside if it's pretty cold) for about 20 minutes to harden up.
Break into bars and eat!

Original Toffee
Bring to boil 3 cups brown sugar with 2 cups (4 sticks) butter.
Grease 2 9x12" pans with butter and sprinkle 2 cups of chopped nuts over each pan (I like pecans the best but walnuts or almonds work as well)
Boil butter and sugar for about 10 minutes, stirring constantly, until it just begins to smoke.

Pour over nuts.
Sprinkle 1 cup of chocolate chips over each pan.  Cover with other cookie sheets so chips melt.  Wait a few minutes then spread chocolate around.
Place in freezer or outside for 30 minutes or so until hardens.
Break into bars and enjoy!


Shrimp and Grits

1/4 cup red bell pepper, coarsely chopped
1/2 cup green onions, chopped
2 tbs. butter
2 cups water
2 cups milk
1/2 teas. salt
1 cup uncooked grits (not instant)
1 cup shredded cheddar cheese
1 large link andouille sausage chopped
1/2 pound raw, peeled shrimp

Saute bell pepper and onions in butter. Add the sausage.  Set aside.

Combine water, milk and salt in a saucepan.  Bring to boil and stir in grits.  Reduce heat and cover.  Let simmer for about 5 minutes or until creamy. Then stir in the cheddar cheese and 1 tbs. butter.

When grits are done, warm back up the sausage and onion mixture and add the raw shrimp to that. Saute over medium low heat until shrimp are pink.

Spoon grits on a plate and top with shrimp/sausage mixture. Enjoy!
